自古以來,釀酒需要眾多工匠參與,但隨著工具的進步,相關職業日益減少。工匠本身也是一種職業,而木桶因維護管理效率低下,已在大多數酒藏中停止使用。木戶泉至今仍使用大量木製工具進行釀造。出於延續木桶文化的考量,此次決定重新引入。淡淡的木香融入其中,成就溫潤醇厚的口感,這正是木桶釀造特有的風味。
