Suwaizumi is produced by Suwa Shuzo, founded in 1859 in Chizu Town, Tottori Prefecture, a historic post-town settlement where the brewery takes its name from the nearby Suwa Shrine and the spring water (izumi) flowing from the Sendai River basin. The brewery centers its lineup on the concept of a happy dining table, crafting sake that proposes joy in everyday meals using water with a characteristically mellow mineral profile. Suwa Shuzo has received recognition including a Gold Medal at the Chugoku Sake Awards and has built a reputation for warm sake excellence.
