The brand is crafted using rare yeast, including a red-yeast variety that creates a low-alcohol, peach-colored nigori with a sweet-tart character unlike conventional sake styles. All production uses Yamaguchi Prefecture-grown rice, and the brewery operates under the motto of 'doing ordinary things ordinarily well,' with all brewing carried out by Yamaguchi natives under the guidance of an Ozu-school master brewer.
