Nabedana Co., Ltd. traces its sake brewing origins to 1689 in the Genroku period, when the company operated at the gates of Naritasan Shinshoji Temple before establishing its current brewery in Kozaki Town, Chiba Prefecture's Katori District, long known as a town of fermentation for its high-quality rice and suitable water. Since 1997, the brewery has conducted all brewing using in-house staff rather than outside master brewers. Nabedana produces two distinct brands: the accessible Jinyu and the specialty-shop-focused Fudo, launched in 2004.
