Rice polished to 65% is brewed using a yamahai starter at this Chiba brewery, traditionally known for letting natural lactic acid bacteria drive the moto. The resulting junmai shows the characteristic acidity and full body typical of yamahai fermentation, packaged in a cup for easy enjoyment.
