ESHIKOTO is a premium sake brand created by Kokuryu Sake Brewing, a Fukui brewery founded in 1804, and launched in 2022 alongside a destination complex in the Satoyama countryside of Fukui Prefecture. The sake, available exclusively at the ESHIKOTO facility and not sold online, draws on the kimoto fermentation tradition while incorporating new brewing methods guided by the mottos pursuing the evolved form of fermentation and a new style of brewing. Kokuryu is one of Fukui's most celebrated sake breweries, and ESHIKOTO represents its most forward-looking expression, connecting premium junmai daiginjo production with local food, culture, and landscape.
