Brewed by Yushin Brewer in Kagawa using Yamada Nishiki grown on terraced paddies in the Kagawa countryside, this namazake is fermented with Association Yeast No. 9, the origin of the product's name. The sake shows a firm rice umami with a slightly dry, structured finish and restrained aroma. A day or two of rest in the bottle allows the flavors to knit into a richer, well-integrated whole.
