Nakagumi (middle-run) junmai daiginjo genshu from the Minamo series of Yoshinogawa in Niigata, made with Koshi Tanrei rice polished to 40% and bottled undiluted. The pure rice formulation with no added alcohol and the center-press selection produce a sake with concentrated umami, elegant ginjo aroma, and vivid intensity from the natural high-alcohol genshu bottling.
