Kame no O, a rare heirloom rice seldom used for premium ginjo production, is polished to 50% in this Watarai junmai daiginjo, yielding a sake with transparent, gentle ginjo fragrance and a slowly expanding umami on the palate. The name Kame no (of the tortoise) reflects the ancient lineage of the grain.
