Junmai daiginjo brewed from Yamada Nishiki at a Ueda, Nagano brewery re-established in 2015, combining the prestige rice with the brewery's clean, minimalist brewing approach. Small-batch fermentation and meticulous temperature control draw out a delicate, fruit-forward aroma and a polished, lingering finish.
