Torachiyo Junmai Ginjo is a pure rice ginjo from Koshitsukano Shuzo in Niigata, named after Torachiyo, the childhood name of the legendary warlord Uesugi Kenshin who was born in the region. Niigata's cold climate and soft snowmelt water support slow fermentation, producing the clean, elegant ginjo character this prefecture is celebrated for.
