Yamagata-grown rice is rested in cedar barrels for this tokubetsu junmai, allowing the wood to impart its distinctive aromatic signature to the pure-rice foundation. Barrel aging is a relatively rare format in modern junmai production, and the brewery's long Shonai tradition lends confidence to this heritage style.
