Tanikaze, named after a celebrated Edo-period grand sumo champion from Miyagi Prefecture, is a junmai daiginjo from Suminoe Shuzo brewed with Yamada Nishiki polished to 40%. Fruity and vibrant on the nose, it has a concentrated rice core, firm acidity typical of Miyagi yeast, and a long, clean finish.
