Shiroiu from Hakuran Shuzo in Miyoshi, Hiroshima, is a honjozo-grade sake whose name references a white cormorant, a bird associated with the Ota River and Hiroshima's natural landscape. The honjozo category uses a modest addition of distilled alcohol to accentuate aromatics and lengthen the finish. Brewed with Hiroshima's characteristically soft water, it presents a smooth and clean style.
