Description

Shinsei Iwai Junmai Daiginjo uses Kyoto's celebrated Iwai rice — a sake variety registered in 1951 and cultivatable only within Kyoto Prefecture — milled down for a junmai daiginjo expression from this historic Fushimi brewery. Iwai's large grains with prominent white centers are well-suited to high-polish brewing, and the resulting sake exhibits fruity freshness alongside the natural umami of the rice. Brewed with Fushimi's soft Shiragiku spring water, it twice won consecutive gold at the Kura Master competition in the junmai daiginjo division.
