
Shinomine Omachi Junmai Daiginjo Sannenjukusei is a three-year aged sake from Chiyoshuzou in Nara, using Omachi polished to 50% with Katsuragi mountain spring water. Three years of careful cellar maturation allows Omachi's characteristic broad depth to develop into complex layers, creating a contemplative daiginjo whose aging potential was specifically designed into the recipe.
