Jukusei Sannen (熟成三年) designates three years of aging applied to Shinomine's Kimoto Junmai Yamada Nishiki from Chiyoshuzou in Nara. The kimoto lactic character combined with three years of cellar maturation in Gose City produces a sake of remarkable depth, earthy, savory, and layered, supported by the mineral backbone of Katsuragi spring water.
