Rakunoyo Genshu from Marui Gomei Kaisha in Konan City, Aichi Prefecture, is a full-strength, undiluted expression of this mid-Edo-period brewery's distinctive brewing character. Marui Gomei, founded in 1790, draws water from a 40-meter deep well fed by the Kiso River system and employs yamahaishubo starters and Tajima toji master brewers, producing sake of notable individuality. The genshu format amplifies the house's trademark depth and concentrated rice flavor without the softening effect of added water.
