Omachi rice is pressed and bottled as a namazake in this daiginjo from Nomura Jozo in Ibaraki Prefecture. Omachi, known as the diamond of sake rice, is grown in the Bizen region of Okayama, and here presents its characteristically wild, complex depth in a daiginjo format.
