Yamada Nishiki polished to 60% and brewed as an ikkanzukuri, meaning the brewery manages the entire process from rice cultivation to pressing. Locally grown Yamada Nishiki from Yamato-Koriyama is used, and low-temperature fermentation develops the rice's umami and a rich, food-friendly depth.
