Maboroshinoginjo (まぼろしの吟醸), meaning phantom ginjo, is a Ginjo from Egashira Shuzo in Omuta City, Fukuoka, polished to 49%. A brewery with Edo-period roots (family business from 1830) and a specialty in producing 10-, 20-, and 30-year aged sake, Egashira Shuzo applies the same attention to detail that enables multi-decade aging to this premium ginjo expression.
