Yamada Nishiki polished to 55%, one step higher than the brewery's standard junmai, this tokubetsu junmai from Saitama's Hasuda city is brewed using Arakawa hard spring water and aged with the house style of long, patient maturation. The stricter polishing refines the rice character while preserving the firm, food-centered structure the brewery is known for.
