Kenshin Josen from Ueno Shuzo in Joetsu, Niigata, takes its name from Uesugi Kenshin, the celebrated sixteenth-century warlord of Echigo Province, whose legacy remains a point of regional pride in the area now comprising Niigata Prefecture. The josen designation indicates an above-standard grade, positioned above table sake in the brewery's hierarchy for everyday quality. Joetsu's proximity to the Sea of Japan and its abundant snowfall contribute the soft water essential to Niigata's clean, dry brewing tradition.
