Reihou rice, a variety widely cultivated in Kyushu for sake production, is polished to 65% for this junmai from Senryu Shuzo in Nagasaki. Brewed with soft spring water from the Kitamatsuura Peninsula, it reflects the traditional approach of this 1688-founded brewery to producing clean, regionally grounded pure rice sake.
