Kamitaka (神鷹) Honjozo Shiboritategenshu is a fresh-pressed, undiluted honjozo from Eigashima Shuzo in Akashi City, Hyogo's Nishi-Nada region. Founded in 1679 during the Edo period, one of Japan's oldest active breweries, Eigashima has revived the rare Muromachi-period Mizumoto (水酛) technique , natural lactic fermentation without any additives , for soft texture and rich umami. This genshu release captures the raw intensity of this ancient fermentation approach.
