Junmai made at this Hiroshima brewery using ultra-soft local water drawn from wells near the Takanousu mountains, with rice polished to 65%. Low-temperature fermentation and one year of cold aging produce a sake with concentrated rice umami and a dry, clean finish. The brewery's soft-water brewing heritage gives it a characteristically smooth, mellow texture.
