Junmai Ginjo Shussejo Shizukushibori is a drip-pressed junmai ginjo from Hamamatsu Shuzo in Shizuoka, where the mash is hung in bags and sake is collected drop by drop under its own gravity rather than by mechanical pressing. This labor-intensive shizuku method minimizes pressure on the mash, extracting an exceptionally clear, delicate sake with purer aromas. Brewed with Shizuoka yeast and locally grown rice at the Tenjingura brewery established in 1871.
