Dewa Sansan, a Yamagata-bred sake rice developed from Miyama Nishiki and Hana Fubuki parentage, is used in this junmai ginjo, a category for which the variety is particularly well suited. The brewery has taken four consecutive gold medals at the National New Sake Appraisal, and this expression demonstrates the clean, aromatic potential of the Shonai terroir.
