
Gunmaizumi Maikaze is a junmai from Shimaoka Shuzo in Ota, Gunma, brewed with the locally developed Maikaze sake rice using the yamahai method. The brewery, founded in 1863 at the southern edge of the Akagi alluvial fan where spring water is abundant, applies yamahai brewing to nearly all its lineup, aging tanks for one to two years before bottling. Maikaze contributes a transparent quality to the sake, with fresh acidity from the new-season yamahai fermentation.
