An unpasteurized expression from Emishiki Shuzo's Elements of Life series, this sake uses gentian flower yeast (hanakobo) to coax a distinctive wildflower aroma with crisp herbal depth from 100% Shiga-grown rice. Brewed in Koka with the traditional kimoto starter and hand-pressed via funa-shibori, it retains the vibrant, lively texture that only raw, unfiltered sake delivers.
