Junmai ginjo from Sudo Honke in Kimitsu, Chiba, produced with Yamada Nishiki and cold-fermentation methods that emphasize clean, elegant aroma. The brewery uses water from a deep-aquifer spring on its premises, and its Amanohara label has earned international competition recognition.
