Yamada Nishiki polished to 40% anchors this junmai daiginjo from Sudo Honke, brewed with water drawn from 500 meters below ground in Kimitsu, Chiba, one of Japan's only spring-water sites selected by the Environment Ministry's Heisei Meisuihyaku list. The brewery's hand-crafted, cold-fermentation approach produces sake with fruit-forward aroma and a dry, refined finish.
