The brewery was founded in 1688 and has spent over 20 years refining its approach to yeasts cultivated from flowers such as strawberry blossoms, sunflowers, and pink nadeshiko, lending its sparkling sake a distinctive aromatic complexity. Rice grown through the aigamo duck-farming method on the Saga plain provides a clean, pure base for the delicate bubbles.
