Houraitsuru is the foundational expression of Harahonten, a small Hiroshima City brewery founded around 1805 and operated in an underground facility that provides natural temperature stability for year-round brewing. The brewer-owner functions as the sole toji, using Hiroshima's characteristically soft water and locally sourced rice to produce sake with the clean, smooth texture associated with the Hiroshima brewing tradition.
