Heiankyoujiman, meaning pride of Heian-kyo, is a sake from Hosoishuzou in Kyoto, the city that served as Japan's imperial capital for over a millennium under the ancient name Heian-kyo. Kyoto has long been celebrated for its fushimizu, or underground water from the Fushimi district, which is soft and mineral-light and ideal for brewing clean, refined sake. This expression carries the prestige of its historic namesake, representing the understated elegance associated with Kyoto's deeply rooted brewing tradition.
