Hayaseura Yamahai Honjozo Hiyaoroshi is a seasonal autumn release from Miyakehikoemonshuzo in Fukui, combining the wild complexity of yamahai fermentation with the mellowing effect of summer maturation. Single-pasteurized and released in autumn, it offers a rich, layered profile with savory depth and a smooth, rounded finish.
