Ginjoshu Taiheijin is a ginjo-grade sake from Machidashuzouten in Gunma Prefecture, brewed with rice polished to 60% or below and fermented at cool temperatures to develop its characteristic aromatic profile. Gunma's access to clean mountain water from the Japan Alps and surrounding ranges supports the precise temperature management required for ginjo brewing. This sake may include a small addition of distilled alcohol to enhance its floral aromas, as is typical of the non-junmai ginjo category.
