Edononikoroshi is a ginjo from Koyamashuzou in Tokyo, brewed in a style that evokes Edo-era sake culture, when Tokyo was the center of robust urban sake consumption. Nikoroshi refers to a dry, sharp sake said to 'slay demons' with its assertive character. This ginjo reinterprets that historic dry tradition with modern ginjo-level polish and Tokyo's contemporary brewing sensibility.
