原本父親喜愛,水戶部家也自釀梅酒,覺得家釀比市售梅酒美味得多,這是開始製作的契機之一。作為後起之秀,我們堅持以日本酒為基底,釀造真正美味的梅酒。請務必體驗用日本酒浸漬的梅酒風味。從梅的品種、成熟度,到所用酒的味道、糖的種類、浸漬方法乃至作業時間,反覆進行了多次實驗。為了做出好東西,「找出什麼是必要的、什麼是不足的,在不斷試錯中克服困難,持續踏實地重複這些工作非常重要」。龍先生在隨筆中寫下的這句話影響深遠。梅酒釀造與日本酒釀造自然不同,但也有另一番樂趣。獲獎經歷:2011年「天滿天神梅酒大會」亞軍,2015年「梅酒全國制霸酒類大會」冠軍。
