岐阜縣
平和錦酒造的主樓與釀酒倉均為創業時期的建築,至今已有約160年歷史,釀酒充分利用奧美濃的自然氣候條件。由於是小型酒藏,釀造全程當然為純手工完成,所用器具均為沿用已久的傳統工具,不使用大型設備。每批次產量有限,正因如此,長年棲居於倉中的酵母與杜氏、藏人傳承下來的釀造工藝,共同孕育出金泉與平和錦酒造獨有的清酒風味。
