Sasanishiki grown in Shonai under contract is used in this tokubetsu junmai, a bottle-aged (bin gakoi) expression that won the highest gold medal at the Sixth Slow Food Japan Kan-sake Contest. Deep rice umami and clean structure make it excellent when gently warmed.
