Momijikin Chokijukusei Ginjoshu, meaning long-term aged ginjo sake under the crimson maple leaf gold label, is a rare aged ginjo from Kirinzan Shuzo in Niigata that has been cellared over an extended period, developing deeper, more complex flavors than fresh ginjo releases. Extended aging in sake typically produces a golden hue, caramelized notes, and a softened, rounded mouthfeel that distinguishes koshu from the fresh, fruit-forward character of young ginjo. Niigata's clean brewing water and the ginjo-grade polishing form the foundation of this expression, transformed through time into a layered, contemplative sake.
