不願浪費一粒米的心意,成就了這款酒的故事。釀酒用米山田錦,即便由優秀農戶精心栽培,也會產生5%至10%的等外米。農戶們不得不以低價含淚轉讓山田錦的等外米,這一現實給農戶帶來了沉重的負擔。我們旭酒造是與生產農戶共同生存的酒造。因此,正視等外米的問題是無法回避的課題。雖然此前一直在探索利用等外米的方法,但終於找到了突破口。儘管耗時費力,但一款只有用等外米才能釀製出的美味好酒就此誕生。
