Benisashi plums from Fukui Prefecture are combined with rock sugar and 1985-vintage aged sake in this koshu umeshu. The ambient-temperature aging of the base sake through more than four decades of Gifu's seasonal cycles builds the mellow, layered character that defines the older Showa vintages in this plum liqueur series.
