Description
This 1997 vintage umeshu combines Fukui Prefecture Benisashi plums and rock sugar with aged sake from the same year. The koshu base, aged at room temperature in the earthen-walled Gifu storehouse, provides the mellow, non-sticky sweetness that, according to the brewery, gives this style its sense of extension without the heaviness typical of liquor-based plum wines.
