Made with Benisashi plums from Fukui Prefecture in 2011-vintage aged sake with rock sugar, this koshu umeshu reflects the brewery's decade-spanning commitment to vintage-dated plum liqueurs. The base sake's room-temperature maturation in the earthen Gifu storehouse builds a mellow, complex foundation for the plum fruit.
