Daiginjo Hakukoma Yado is produced by Hakukoma Shuzo in Imanosho, a former post town (shukuba) on the historic Hokuriku highway in Minamiechizen, Fukui Prefecture. The name Yado ('lodging') honors Imanosho's history as a traveler's rest stop during the Edo period, and the daiginjo grade reflects the brewery's commitment to crafting premium sake worthy of its heritage location. Fukui's snowmelt water from the Ishikawa-Fukui border mountains provides ideal soft brewing water for the delicate fermentation daiginjo requires.
