A junmai daiginjo from Kyoto's Tango region brewed with the rare heritage rice Kame no O, polished to 60% for the junmai ginjo expression of this variety. Balanced refreshing acidity and gentle sweetness characterize the Kame no O style; the brewer's first batch using this rice took first place at the 2010 Spring National Liquor Contest.
