Tokubetsu Junmaishu Matsunotsukasa is the special designation pure-rice sake from Matsuse Shuzo in Ryuo Town, Shiga, positioned above the base junmaishu through a higher polishing ratio or distinctive technique that earns the tokubetsu qualification. Founded in 1860, Matsuse Shuzo applies box-koji technique, contract-grown rice, and small-batch fermentation to this expression, producing a sake that is smooth, balanced, and representative of the refined Shiga brewing aesthetic. The 120-meter-deep Aichi River underground water gives the sake its characteristic gentle mouthfeel.
