Polished to 55% and brewed as a tokubetsu junmai, this sake takes its name from the ancient Jomon-era water sources of the Hakkoda region. Brewed in Shichinohe, Aomori, using soft water from the Takase River, the style aligns with the brewery's longstanding Nanbu toji approach of restrained, balanced sake.
